It’s been 11 years since I baked a cheesecake. I had gotten some cream cheese at the store, and was amazed to see several brands of cheesecake fillings on the shelves. What happened to the “make it from scratch” concept? Well, I still like to bake from scratch. It’s not hard and it does not take that much time. In case anyone still enjoys baking from scratch, here is how I baked my Oreo Cookies Cheesecake.
The ingredients I used were:
- (2) 8oz. 1/3 less fat cream cheese
- (2) eggs, (1) tsp. of vanilla extract
- (1/2) cup of sugar
- (1/2) cup light sour cream
- (1) tsp. of flour
- (1-1/2) tbs. of melted butter
- (1) tbs. of chocolate syrup
- (2) cups of crushed graham crackers
- (1) cup crushed Oreo Cookies
- (1) round aluminum pie tray.
Pie Crust: Mix the melted butter and the graham crackers together. Then, spread and press them evenly inside the tray. Use a plate to help press it evenly. Let it sit for a few minutes.

Cheesecake Filling: Using an electric mixer, mix cream cheese, eggs, vanilla extract, sugar and flour until smooth. Then, add sour cream into the bowl and mix with low speed for 30 seconds.

Pour 1/2 of the mixture into the crust, then add a layer of crushed Oreo Cookies, and finally the rest of the mixture on top. Put a few drops of the chocolate syrup on top of the cheesecake, and use a toothpick to create patters. Remember to preheat the oven at 325 degrees.

The cheesecake needs to be baked for about 35-40 minutes or until the edges are lightly brown. When ready, let the cheesecake cool down at room temperature, then put in the fridge for a few hours and serve cold. That is all! Enjoy your cheesecake.

For those of you who need to make a low fat, low sugar version, you may use fat free cream cheese with fat free sour cream, or plain fat free yogurt as a substitute for the sour cream. You can also use sugar substitutes, egg substitutes and margarine instead of butter. Best of luck on this one.

Do you remember any details about the coffee shop or where it was or what was different about the cheesecake? You got me curious about this cheesecake, I want to try and hunt it down.
The coffee shop was very small, definitely not a chain store. It is a place where locals go. They had different kinds of cheesecake but I remember it had a very light almond taste, but looked plain. My college friend was from Hawaii, but it’s been 14 years. I don’t even remember the girl’s name. Maybe I am going to try making another cheesecake. But, this time with almond extract instead of vanilla.
