Flan-tastic!

At last! I can smell! After 5 miserable weeks with the flu and cold virus, I can finally cook, smell and enjoy the food I eat. The first thing I wanted to make was FLAN. A delicious dessert that is very popular in Latin America. But, if I am not mistaken, I believe the origin of Flan is French. I am certain there are many different variations and flavors. Everyone makes it differently, and here is my version.

Ingredients:

4 large eggs

3/4 cups of sugar

1 can (13.5 fl. oz.) Coconut Milk (any brand)

1 can (14 oz) Sweetened Condensed milk (any brand)

1 can (12 oz) Evaporated milk (any brand)

Additional items needed:

9″ Round cake or pie pan

A large roasting pan

PREHEAT OVEN AT 350 degrees F.

Heat sugar in a saucepan over medium-low heat. Stir constantly until the sugar dissolves and gets a caramel color. Pour it rapidly into the round cake/pie pan and spread so the entire bottom of the pan is covered with the sauce (Do this rapidly because the sugar will harden fast).

Combine Coconut Milk, Sweetened Condensed Milk, Evaporated Milk, and Eggs into a bowl. Mix for approximately 3 to 5 minutes and fill the round pan to the edge, and cover with aluminum foil. Then, place it inside the roasting pan. Fill the roasting pan with 3/4″ of water. Bake for approximately 1 hour and 15 minutes, or until the center of the Flan comes out clean when tested with a toothpick.

Remove Flan from the roasting pan. Cool the Flan or refrigerate for at least 3-4 hours. Run the knife around the edge of the pan. Then, invert a serving plate over the pan. Turn over, shaking very gently to release the Flan from the pan.

If you want a stronger coconut flavor, you may add some coconut extracts. VOILA! There is Coconut Flan. Good luck!
